- Sift ½ tsp. matcha powder into bowl or cup.
- Pour 60ml (2oz) hot water onto the powder. For best results use water just under a boil.
- Whisk thoroughly until your matcha tea forms a frothy layer.
- Add more hot water to desired taste.

I've been drinking ceremonial matcha for over 20 years, sampling from some of the most respected producers. I've tried Ippodo's blends, which usually pack a strong umami punch with a bit of crisp bitterness and a fresh, grassy scent; Marukyu Koyamaen's offerings, which strike a nice balance with some light bitterness, umami, and a hint of nutty sweetness; and Yamamasa Koyamaen's matchas, which often feature those subtle toasted seed flavors mixed with a soft sweetness.
Recently, I ordered the 100g bag of Kirishima Ceremonial Grade Matcha from Soar Organics to see how it stacks up, especially given its organic certification and small-batch production from a single farmer. Upon opening the resealable bag, the powder stood out with its bright, vivid emerald green color—a clear sign of freshness and careful processing, free of the muted tones that show up in lower-quality or older matcha.
I prepared it traditionally: sifting about half a teaspoon into a bowl, adding 70ml of water at 70°C, and whisking to a fine froth. The mouthfeel was creamy and fine-textured, verging on lush, with a mild sweetness reminiscent of fresh citrus peel and light cream, accented by faint herbal hints and crisp veggie notes like young greens. An even umami builds and fades gently, free of any sharpness or off-notes, making it straightforward to enjoy as usucha. The energy was steady and focused, carrying me through the morning without the jitters or crash I've noticed with many other brands.
Compared to those established names, I'd place Soar's Kirishima right among them in overall quality—its flavor depth and lack of harshness hold up to the best I've tried, yet it stands out for accessibility. The organic sourcing, single-origin transparency, and strong value at this price point for 100g (without the typical imported premium markup) make it especially appealing.
