Vegan Matcha French Toast
This warming vegan matcha French toast is the perfect brunch item. French toast is a classic brunch favourite for many, but so many traditional recipes require a variety of ingredients and time. This dairy-free take on matcha French toast will leave you feeling full and happy - with a healthy caffeine boost. Baking and cooking with matcha can be a lot of fun! Not only does this powerful green powder add extra nutrients and antioxidants to your finished products, but it also adds a fun splash of colour!

Vegan-friendly, Dairy-free and can easily be made gluten-free
Recipe makes: 4 pieces of toast
*This recipe works best with day-old bread or a very sturdy bread, like sourdough or ciabatta.
What you'll need:

4 pieces of Day-old or Sturdy Bread (such as sourdough or ciabatta)

2 ripe to very-ripe Organic Bananas
-
2 tbl. Coconut Oil
-
2 tsp. Pure Vanilla Extract
-
2 tsp. Plant-Based Milk (we used almond)
-
1/2 tsp. Organic Cinnamon
-
1 tsp. Soar Organics Matcha
-
A generous amount of Coconut Oil or Vegan Butter to heat your pan
Optional toppings:

Bananas
-
Blueberries
-
Raspberries
-
Blackberries
-
Pure Maple Syrup

Organic Powdered Sugar
Steps:

Begin by mashing your bananas very well. Mash them with a fork until they become quite "liquidized".

Add your other wet ingredients to the mixture: coconut oil, vanilla extract and plant-based milk. Stir well.

Next, add in your cinnamon and Soar Organics Matcha. Mix.

Heat your pan on medium heat and add either your coconut oil or vegan butter. Add a generous amount to ensure your toast doesn't stick!

Individually soak each piece of bread in your matcha French toast mixture. Next, add your bread to your pan and cook on each side until golden brown.

Finally, serve with your choice of toppings and enjoy!
